Tacos and Carbs

Wahoos fish tacos

I know.  What in the world is on that plate?   I’ll make it easy – two Wahoo’s Fish Tacos.

So, there I was, out for lunch today at one of my favorite places – Wahoo’s Fish Tacos.  Don’t get all crazy on me if you haven’t had a fish taco before.  They are really pretty great.  How can they not be?  If you get a chance, try them.

But, this is not an ad for Wahoo’s.  This is a story of having what you want, but just a tiny bit less.  This is not half is better than none – as it is with oranges for me.   Let me tell you what I mean.

The tacos come wrapped in two corn tortillas   I don’t need to eat two tortillas – one will do just fine.  So, what did I do?  I ate one corn tortilla with each taco – leaving one on the plate.  When I was finished I had two tortillas on the plate.  How many carbs did I leave on the plate? Eighteen to 20!  I was able to take a meal that would have about 45 carbs and only consumed 25, or so.

I got to eat one of my favorite foods, and keep a lower carb count.  I didn’t give up a thing!  How great is that?  I eat just a tiny bit less.  Maintain my glucose level where I want it.  And, maintain my weight.  From my perspective, it just does not get any better than that!

You’re smart.  You know the lesson, here.

Can you eat the way I do?  I don’t know.  As the saying goes, your mileage may vary.  You have to fight your war and learn how your body handles the food you eat in the amounts you eat.  How do you learn?  By using a Food Diary.

I have been a diagnosed Type 2 Diabetic for three and a half years and waging my War On Diabetes from Day One.  You can declare your War On Diabetes – and WIN!  I know you can.  I hope you know it, too.

As always, thank you for reading.
